We’ve got a busy week ahead and so I need our meal plan to be very easy and low stress. I’m getting ready to go on maternity leave in just 4 short weeks which means things at work are crazy!!! I’m so looking forward to spending a couple weeks with my daughters before their little sister makes an appearance (fingers crossed)…although I can’t wait to meet our new little darling too!
This is our week to pick up CSA and according to the Be Wise website, this is what we’ll be getting: carrots, collard greens, cucumbers, eggplant, lettuce, oranges, onions, nectarines, peaches, plums, spring mix, tomatoes (3 kinds) and zucchini.
Monday – Beef and Bean Taco Casserole served with fruit. I’m going to try making this on Sunday night for a hassle-free start to the week.
Tuesday – Slow Cooker Greek Chicken Breasts served with greek salad and pita with hummus.
Wednesday – Panko-crusted tilapia with whipped potatoes and carrots and sauteed zucchini.
Thursday – Grilled Vegetable Pesto Pasta served with salad.
Friday – Quick and Light Pad Thai served with grilled eggplant and salad – my husband loves pad thai and I’m always on the hunt for a good recipe that I can make at home without a ton of specialty ingredients. This one looks promising.
Breakfast ideas – Carrot Pancakes, eggs, and cereal with yogurt.
Snacks – carrots and hummus, fruit, crackers, yogurts and string cheese.
