I’m starting off today’s post with a picture of my yummy Berry Kale Smoothie recipe because we’ve been eating a ton of smoothies lately, and since we’re supposed to be getting more kale this week in our CSA delivery, it seemed appropriate.
Around here, kids are starting back to school tomorrow, although my kids don’t start their new preschool until after Labor Day. I’m not sure where the summer went, but we’re going to do our best to enjoy what’s left of it with plenty more beach and pool days in the coming weeks. This week’s CSA delivery should bring us the following yummy choices: carrots, collard greens, anaheim chili peppers, eggplant, kale, rosemary, parsley, onion, oranges, peaches, butternut squash, spring mix, tomatoes and zucchini. I was a little surprised to see butternut squash on the list, but excited to start working on some autumn recipes to use it with…stay tuned.
Tuesday – Kale and Quinoa Patties served with grilled salmon.
Thursday – Roasted Marinara Sauce with spaghetti.
Friday – Greek Ground Chicken Burger with roasted rosemary potatoes.
Snacks – I’m always struggling with how to use eggplant and this week I’m going to try making Baba Ganoush for dipping pita and carrots. Also experimenting with some new kale smoothies this week…if they turn out I’ll post them later.
