This is a big week for celebrations around here. My two daughters are starting their new preschool this week so we’re going to be adjusting to some new schedules and trying to make the transition as smooth and stress-free for the girls as possible. Also, it was my sister and mother’s birthdays this weekend (happy birthday both) and today is my 8th wedding anniversary (not to mention we have a new little baby girl due in about 3 weeks). Unfortunately, my husband has to work late for our anniversary, but we’ll make it up with a much needed date night next week!
I was really hoping to make this week a $50 Meal Plan Week, however, after perusing my fridge and freezer I didn’t find much that I could use to make a week’s worth of meals for practically nothing. However, I still want to try and feed my family on a tighter than usual budget this week, so I’m going to try a new method for controlling my spending and that is by loading a pre-paid debit card that I got from Card.com with $75 for the week. This card works like one of those pre-paid visa gift cards that I’ve seen at the grocery store, you load it with any amount you want and then you can use it like a credit card. I was compensated by the folks at card.com to try out their product so this week I’ll be using this card instead of the cash in an envelope system…should be much more convenient while still limiting my spending.
This is not our week for picking up CSA, but we have the following items leftover from last week: butternut squash, chard, red beets, dill, dino kale, oranges, apples, parsley, onions, spring mix and tomatoes.
Monday – Greek Salad Chicken Wraps - I’ll probably add a roasted beet too.
Tuesday – Breakfast for dinner with my awesome Butternut Squash Waffles, fruit salad, eggs, hash browns and maybe even a little uncured bacon.
Wednesday – Chicken Enchiladas – I made a double batch of these a couple of weeks ago and froze half. Now it’s time to eat them.
Thursday – Panko Crusted Tilapia with grilled potatoes and salad.
Friday – We’re taking the kids to see the Disney Junior Live On Tour with Jake and the Neverland Pirates – I really hope our 2 year old isn’t too scared! We’ll take them out to dinner on the way home (I still have a gift card to Souplantation so hopefully this will cover us).
Snacks – Now that I’m on maternity leave and the baby hasn’t made her appearance, I’m going to try and get a little more creative with snacks. I found this recipe for Peanut Butter Chocolate Chip Granola Bars that I’ve been dying to try and I think this is the week. I’m still addicted to these Tropical Kale Smoothies although I’m running out of kale. Trying out Ants on a Log per a suggestion on Facebook as well as some homemade fruit leather (I’ll also post this one if it works out).
