This is our week to pick up our CSA delivery and according to the Be Wise Ranch website, here’s what we should have to work with: beets, carrots, chard, cilantro, cucumbers, Jester Squash (not sure what this is), lettuce, rosemary, grapes, red bell peppers, apples, basil, tomatoes and zucchini. Let’s see what deliciousness I can come up with using all that.
Last week’s plan to spend just $75 on groceries using my pre-paid debit card from Card.com was a failure. I’m not sure how my spending went out of control, but it did and I finished off the week spending closer to $150. The card worked great, but the problem was my own discipline and the fact that I still had my regular credit card available for the overspend once my $75 was up. However, it’s a new week and I’ve got a chance to start over with a clean slate. I’m getting CSA this week which should help keep the fruit budget in check. I’m also in charge of bringing snack for preschool one day this week and I will not be including that in my budget (20 organic cheese sticks with crackers and fruit can really add up).
Monday – Creamy Tomato and Spinach Pasta - I’ll use half and half instead of cream cheese and swiss chard instead of spinach.
Tuesday – My hubby has softball this night so I’m going to make myself a big batch of refried beans and spanish rice for these awesome bean and rice burritos. These freeze great and I’m going to stock the freezer so that we have some options when the baby comes.
Wednesday – Spinach Mushroom and Feta Crustless Quiche - my husband hates mushrooms, so I’ll leave those out and use the rest of the chard instead of spinach.
Thursday – Thai-style Stir-fried Chicken – I’ll add some of the red bell pepper too.
Friday – Planning to enjoy the last bit of summer by making sandwiches and taking them down to the beach for a dinner picnic.
