I’m happy to report that we didn’t have any further experiments with markers as makeup this week, but two of the three girls did get very sick. Both our middle daughter, Monkey, and the baby, Ladybug, came down with fevers over the course of 3 days. Then Ladybug cut her first teeth at the same time Monkey developed a cough and runny nose. It was a long week and I’m so glad it’s over. The weekly meal plan from last week was successful for the most part with the exception of the Thai Fried Rice which I didn’t get a chance to make after a sleepless night followed by an endless day of playing nurse to some sick, tired and cranky girls…my husband took pity on me and picked up take-out that night. Therefore you will notice that recipe is on the list again this week.
After the prep work I did last Sunday, all meals went very smoothly and I’m pretty sure I was able to prepare everything within the 30 minutes allowed. I say pretty sure because it never fails that I start working on dinner and I get called away to settle an argument, answer the phone or change a diaper. All I care about in the end is that everyone was fed and I wasn’t stressed out by complicated recipes or too many dishes.
The most delicious and easy thing I made from last week’s plan was Easy Crockpot Granola. This recipe was a cinch to make and tastes great. I still have about half of it leftover that I’ll be eating this week as well. Don’t forget to check out my “Tried and True Recipes” board on Pinterest where I’ve pinned my favorites.
Monday: Thai Basil Fried Rice – Giving this another try this week, I was so bummed last week that we didn’t get to try it.
Tuesday: Tilapia Fish Tacos with Lime Crema – Please forgive the photos here, this is actually my recipe that I did as a guest post for $5 Meals about a year ago. I’ve come a long way since then. I assure you, the tacos are awesome despite the pictures and it’s a great way to use up the cabbage I have sitting in the fridge.
Wednesday: Kids Choice – Cinnamon Raisin Carrot Pancakes with Green Eggs (eggs mixed with spinach in the blender before they are cooked). Until about a year ago, my kids thought they didn’t like syrup but since then they have discovered how delicious it is so I’ve been giving them each their own portion in a medicine cup. I give each girl their own cup that they can pour on the pancakes and when it’s done it’s done. So they can control if they want to pour the whole thing on or dip each piece to make it last longer…or even drink it. Thank you to Raise Healthy Eaters for the suggestion!
Thursday: Slow Cooker Greek Chicken Pitas – This Thursday is swim lessons for the girls so we come home and have even less time for cooking than usual…I love the slow cooker on days like that!
Friday: Store bought raviolis with pesto sauce and salad – by Friday night I’m going to be beat so this is a lazy girl’s meal that pleases everyone and is a snap to make. I have a bunch of basil that needs to be used up so this will be perfect!
Breakfast inspiration: Whole Wheat Banana Nut Quick Bread – this stuff is so delicious although I usually make it as muffins instead of bread, just cook it for about 17 minutes. Can you tell I’m loving my Vitamix? I’m pretty sure you could make these in any blender.
Weekly Meal Plan Prep: cook rice, slice bell peppers, shred cabbage, prepare lime creme, carrot puree and pesto.
